If you've yet to try out cooking en papillote (in a parchment pouch), hop on it. This method might sound intimidating thanks to its French name, but it's virtually foolproof (the contents of the pouch gently steam in the oven). Moreover, it requires very little cleanup (just recycle the parchment paper when you're done — no scrubbing of pans needed).
