On today's episode of Ingrid Dishes, Ingrid Nilsen (aka YouTube personality Missglamorazzi) is hacking Lemonade's salmon-stuffed avocados. The recipe is a great way to use leftover fish and makes a quick and easy lunch or light dinner option.
- 2 cups (16 ounces) salmon fillet, cooked and cooled
1/4 onion, finely chopped
2 tablespoons fresh dill, plus more to taste and for garnish
2-3 tablespoons Majestic Original Garlic Spread
2 ripe avocados
- In a bowl, break up cooked salmon with a fork. Mix in onions, dill, and garlic spread, tasting and adjusting ingredients as needed. Squeeze 1/2 lemon juice and combine. The mixture should resemble tuna salad.
- Cut avocados in half, remove pits, and scoop salmon mixture into the avocado halves. Garnish with lemon slices and more dill.
