Although I'd already enjoyed pâté, I decided to go for the raved-about calf's liver, meaning I was having back-to-back liver courses (not something I'd recommend for the faint of heart!). The skillet-fried dish is served with bacon, which lends the liver a crisp exterior and a robust, minerally flavor.
