What Are Your Favorite Crockpot Recipes?

It's freezing in San Francisco, and I think it's high time I broke out my slow cooker. It's a wonderfully useful kitchen gadget that makes cooking a dinner for a crowd easy — while filling your house with an amazing fragrance.

I'm not the only one who is interested in slow cooker experimentation, reader dreamalittledream recently asked the YumSugar Community for crockpot help. She says, "I just got a crockpot and am itching to use it. I've found a ton of recipes online, but I trust YumSugar members more for recipes. Any crock pot recipe that I have to try!?"

@Amber: I'm the same! I don't leave it on during the day if I'm at work, but at the weekend when I'm staying in or going in and out to go grocery shopping etc (there's always a flatmate in anyway). I started using that book and, oh my god, it's amazing! At the moment I'm obsessed with beans - cooking dry beans in the slow cooker makes them so creamy and buttery! There's also a wonderful chili recipe that has some cocoa powder in it, I really recommend it.

I made a great short rib recipe a while back from Rachael Ray, of all people - I actually tried a few recipes from the A Year of Slowcooking blog - they were pretty good, but I was also trying to focus more on healthier eating and found those to be lacking on that end. I've been trying to stick to recipes with nutritional information as a guide and have since found some decent recipes from Cooking Light's website.

Most of the recipes I've found are so meat-heavy, which I don't eat. And I hate leaving any appliance on when I'm not in the house. So basically I have used my slow cooker twice. Both times to make refried beans and both were overnight while I was sleeping.
