This recipe is super simple to make, so simple in fact that I had it three times for dinner last week. In the mix here, we’ve got a combo of corn, black beans, peppers, chili powder, and lime juice. I lined the inside of my sweet spud with some salsa, then piled in the bean mix and topped it off with some cilantro and avocado.
