That looks so easy! Will definitely have to try sometimes. I'm a huge fan of eggs benedict, but it's limited to being a treat when I travel!

I'm kind of skeptical about the vinegar. I mean, I feel that to change the pH enough to encourage the protein in the egg whites to denature would mean more vinegar than most people add. And to add enough would make the eggs taste very vinegary.

i'm going to try this! my mom uses one of those poachpods to make hers and those work well if you want to do something other than the old school method featured here.
