Good question, fuzzles! Buttermilk is actually made with reduced fat milk anyway, so 2% works fine. I'm not sure about soy or almond milk, though — I don't imagine they'd ferment the way cow's milk does. If you try them out, let us know what happens!

Nice post! Questions about the buttermilk sub. What kind of milk is best (whole, 2%, etc), and can plain almond or soy milk be used?
