Nothing can compare to using fresh clams in this simple soup of carrots, coconut, and ginger. The clams were pulled straight from Buck Bay on Orcas Island and prepared in my Airstream's kitchen for dinner. This is the perfect Summer soup — simple, easy, delicious, and healthy!
