One of my all-time addictions is peanut butter. I love it on toast, slathered on crackers, and even mixed in with hot noodles. So it made perfect sense to blend it together with coconut milk and a touch of soy sauce to create a smooth Thai-influenced sauce that can be drizzled over grilled chicken or used as a dip for nuggets.
- 1/2 cup coconut milk
1 tablespoon peanut butter
1 teaspoon soy sauce
Toasted coconut (optional)
- Place the coconut milk, peanut butter, and soy sauce in a blender and pulse until smooth.
