Watermelon, Radish, and Avocado Tacos

Ingredients

  1. 4 cups butter lettuce leaves
    2 cups seedless watermelon, cubed
    1 avocado, cubed
    2-3 radishes, julienned
    1/2 cup pine nuts, toasted
    Extra-virgin olive oil
    Juice of 1 lime
    Generous pinch of sea salt

Directions

  1. Fill each lettuce cup with watermelon, avocado, and radishes. Sprinkle with pine nuts, drizzle with olive oil, add a spritz of lime juice, and season to taste with salt. Serve immediately.
