The establishment prides itself for being the first in the city to offer this Thai-style street food. And of course, the crowds are flocking for a bite of this ingenious concept, which is like a cross between Smitten Ice Cream [2] and Cold Stone Creamery.

Here's how it works: You choose the mix-ins (candy, fresh fruit, cookies, etc). They go into a cold plate (that reaches temperatures well below -10°F) along with liquid cream. The ice cream maker uses a bench scraper to chop and spread the mixture into a very thin sheet, which freezes in under two minutes. Then the sheet is scraped away from the ice cream maker to form ice cream rolls! According to the company's site [3], "The ice cream produces smaller ice molecules to make it naturally smoother and creamier, eliminating the need to add in additional fat and emulsifiers to create the same rich, creamy texture we love in ice cream."
