What Is Gnocchi?

Definition: Gnocchi

Gnocchi (pronounced "nyoh-kee") means "lumps" in Italian, and refers to a thick, pillowy dumpling. Available fresh, frozen, or dried, the pasta is made from a dough based on potatoes, flour, farina, or semolina, which is rolled into long cylinder shapes, cut into bite-sized pieces, and sometimes decorated with forked ridges. They are boiled, baked, or sautéed, then served in a tomato, pesto, cheese, or butter-based sauce. Smaller forms are referred to as gnocchetti.

I LOVE ricotta gnocchi, especially the spinach or pesto flavoured then baked in the oven with butter and parmesan, it can also be frozen before the boiling stage, mmmm, I made some, it was really easy and economical, plus my entire family loved it

I don't get it, I bought some store made ones, sealed in plastic and did the whole sauteed in butter and herbs thing and they were horrible! I mean I threw it all away. I was so disappointed too because I'm a carb lover, so potatoes, pasta, dumplings and not to mention italian herbs sounded like a perfect meal. But it tasted like nothing, some herbs and oil.

If you had done your 20-second search on Epicurious instead of Wikipedia, you would also know that traditional gnocchi can also be made from ricotta. Epicurious even has Zuni's recipe. I use my Godmother's though. So easy to make and so good.
