A plate full of oysters on the half shell nestled gently on a bed of ice is deliciously rewarding and sublimely satisfying. I've been desperately looking for someone to enjoy oysters with since the season officially started in September! Although you can get oysters year round, much like citrus, they are best consumed now and in months with the letter R. If you love oysters as much as I do, take a moment to learn more about them. For tips on how to select and serve oysters,


  • Oysters are best served with a light, crisp white wine. Muscadet and sparkling varieties are excellent choices.
  • When serving oysters, get six per person for appetizers and about a dozen per person for dinner.
  • Oysters should be alive until just before eating. When ordering oysters, use overnight delivery to ensure freshness.
  • Serve oysters with classic mignonette or lemon wedges. Horseradish and hot sauce also complement oysters.
  • Make sure to rinse oysters under cold water and discard any that are not tightly closed before eating.

About the whole "only eat oysters in months containing the letter R" is misleading. The phrase came about because Oysters spawn in the warmer months , may to august in the northern hemisphere and thier flavor during this time WHEN EATEN RAW will be somewhat watery and bland plus they are smaller, so during the R months they are tastier and bigger. Nothing to do with disease. You can get bacteria at any time with oysters, when eaten Raw. I prefer to steam them or fry them to kill all the bacteria.

I actually really like oysters despite their slippery texture, but some of the oysters here in New Orleans are making people sick due to environmental degradation, so I'm steering clear for now.

Can't stomach the thought of oysters since my sister was violently ill (AROUND the toilet, in a perfect half-circle - took real skill not to get any IN the toilet) from oysters served by a chef friend at a party. I'm very wary of shellfish!

I love raw oysters, too. It's one of my favorite foods. I know white wine is recommended with oysters, but I don't like white wine. I would probably like to have them with a deep, fruity red. Yummmmm!

ooooooh yummmm I love raw of the benefits of living on the coast! The best part is the juice they're in, and slurping it out of the ice-cold shell. I could eat thousands. But I hate fried oysters for whatever reason...

mmmmm, I love raw oysters. My dad has been taking me to a local market since I was little to get oysters on the half shell. mmmmmm! I like them with a little cocktail sauce. course, I think of eating oysters as something to do at a market or a bar...this whole eating them with wine thing is really strange to me, haha.

I love oysters. Absolutely love them. That subtle taste of the sea is positively addicting. I had the best oysters of my life in Santa Barbara, at Brophy Bros. Clam Bar and Restaurant.
