What Would You Make?

Here's the scenario: you are at home and hungry. You have to cook up something scrumptious for you and your boyfriend/girlfriend/ spouse/child/friend, but have limited ingredients on hand.

You have eggs, fresh chives, and a new pepper-mill filled with black peppercorns. Using these products, along with whatever you currently have on hand in your cupboard and refrigerator, what would you make?

To see what I would make,


  1. Since Easter is around the corner I have been craving deviled eggs like mad! I would start by hard boiling some eggs.
  2. While they cook, I'll chop the chives and raid my fridge for any other ingredients that might be tasty in deviled eggs. Red pepper will work well if finely minced.
  3. After the eggs have cooled I will shell, slice in half, and remove the yolks.
  4. Next I will mix the yolks with some mayonnaise, spicy mustard, the chives, the red pepper, salt, and lots of freshly ground pepper.
  5. Finally I will scoop this back into the middle of the egg yolks and chill until it's time to enjoy!

I'd keep it simple, and make an omelette with plenty of fresh chopped chive.

Like lrcaraway, I'd make a frittata. Preheat broiler Cook 4 slices of bacon. Dice up some onion and tomato. In a bowl, whisk 6-8 eggs, chives, Parmesan cheese, salt and pepper, and 1/4 cup of half and half together in a bowl just until blended. Don't overwhisk. Using an oven proof pan, saute onions and tomato with some oil until tender. Pour egg mixture over the onions and tomato, crumble the bacon and ad to mixture. Reduce heat to low. Cook until the egg mixture is just about set on top, then put pan under the broiler until slightly puffed and a light golden brown on top - about 2-3 minutes. Serve with crusty bread and a glass of Chianti.

Eggs scrambled with a little yogurt to meake them creamy and touch a truffle oil to add some flavor to them. Toast to go with of course!

Delived eggs does remind us of Easter dinner. I've never had them with chives...sounds good!

Eggs are my go-to for quick and easy weekend lunches or weeknight dinners. I LOVE making big, veggie-packed omelettes. I'd use these items (chives are GREAT in omelettes), as well as whatever veggie bits I might have lying around. My new favorite omelette to make is filled with veggies, then seasoned with chili powder, cayenne, and turmeric and topped with a dollop of sour cream to balance out the heat. mmmmmm!

Omlette with vegetables and chives, topped off with a drizzle of truffle oil. Yum!
