What Would You Make?

Here's the scenario: you are at home and hungry for food. You have to cook up something scrumptious for you and your boyfriend/girlfriend/spouse/child/friend, but the ingredients you have on hand are limited.

You have a couple of tortillas, fresh cilantro, and pepper jack cheese. Using these products, along with whatever you currently have on hand in your cupboard and refrigerator, what would you make?

To see what I would whip up,

  1. I would start by slicing the tortillas into triangles.
  2. Next I would heat frying oil in a pan until hot. I would fry the tortilla wedges in batches until crisp and then salt lightly.
  3. I would cover a baking sheet with foil and top with the crisp tortillas, grated cheese, and canned black beans and canned corn.
  4. I would bake in the oven until the cheese is melted, about ten minutes.
  5. I would then top the nachos with cilantro and sour cream.
  6. Finally, I would serve with an ice cold brewsky. Yum-O!

guacamole with the cilantro, lime, and tomato. i'd chop some chicken and throw some black beans and salsa in a pan. cook the chicken, black beans, salsa, and pepper jack. throw it all in a tortilla, then make a huge margarita to drink with it.

I would make a vegetarian refried bean burrito with the cilantro, tomatoes, onions, and shredded cheese with a side of fresh guacamole. maybe some spanish or brown rice on the side. mmmmmm.

Quesadilla with tons of cilantro. It would not be a taste of (American) Mexican food without it.

people who dont like cilantro are weird! I'd make that black bean quesadilla, wedge it and dip it in rotel (canned tomato/pepper mix) that had cilantro mixed in it! seriously, people dont like cilantro... soap? odd.

I would make a quesadilla with the cheese and tortillas and skip the cilantro. Yucky! Serve with chips and a Diet Pepsi and I am a happy young lady.

Appetizer: bake up some crispy tortilla triangles and serve with black olive hummus, Dinner: Quesadillas all the way, with a side of mango and pinapple salso, and my personal favorite- Dessert: Deep fry the leftover tortillas (as if there're going to be any), let drain and drizzle the crispy buggers with honey and a sprinkling of cinnamon. SOOOO GOOOD!!!

Quesadilla is what comes to mind. And, I actually do have some carnitas and tomatoes & onions in my fridge right now. So I can make carnitas tacos with homemade salsa. Mmm, mmmm, good!

Add thanksgiving leftovers and that's pretty much what I have in my fridge right now. I was going to put together some type of quesadilla tonight. I was gonna spread cranberry sauce on the tortillas then sprinkle with stuffing, turkey, a little bit of gravy and grated pepper jack cheese for a kick. Obviously, I'm running out of things to do with my thansgiving leftovers, but sometimes the strangest things are the best.

"I would make a cheese quesadilla and throw the cilantro away. I hate cilantro it tastes like soap, i thought it was just me but my husband agrees and so do some of my friends. I guess everyone likes different things." HA! Thats the first thing I thought too Liss! I think its actually a genetic thing...this aversion to cilantro.

Hehe.. I'd make myself a dang quesadilla! Sorry, I can't but help use the Napoleon Dynamite reference. but really, I'd make a quesadilla. Probably with the turkey I still have in my fridge.

I'd make a black bean quesadilla: 1. Shred the pepper jack cheese 2. Add shredded cheese and black beans to tortilla in fry pan (medium heat). 3. Fold tortilla in half and flip about 3-4 minutes into it. 4. Top it off with sour cream, the cilantro (finely chopped) and salsa.

Something a bit more novel maybe-a deep fried savoury cheesecake? Add some roasted red peppers, onions, mix up the cheese, cilantro, and cream cheeze, and then deep fry in a tortilla coat.

cheese quesadillas !!!! with some fresh salsa on the side (diced tomatoes, cilantro, lil lemon juice, cumin, salt and pepper) love the egg wrap suggestions!!!! yummmmm

I'd fry up the tortilla in one pan, make a Pepperjack with tomato, peppers and onions omelet in another pan, put the cooked omelet on the fried tortilla, then throw in a high oven for a minute to get slightly browned. Serve with salsa on the side.
