I Finally Found the Best Frying Pan — and It Doesn't Stick

What Would You Make?

Here's the scenario: you are at home and hungry for food. You have to cook up something scrumptious for you and your boyfriend/girlfriend/ spouse/child/friend, but the ingredients you have on hand are limited.

This week's trio of ingredients come from a suggestion made by reader WildHeavenFarm. In her kitchen, she has fresh shrimp, sweet potatoes, and coconut milk. Using these products, along with whatever you currently have on hand in your cupboard and refrigerator, what would you make?

To see what I would make,


  1. I would start by peeling and slicing the sweet potatoes into French fries, and season with salt and pepper. I would heat some frying oil in a large pot to fry the sweet potatoes.
  2. Meanwhile I would cook some chopped garlic in oil in a saute pan. I would add the shrimp, red pepper flakes, and a little curry powder and cook everything together for a minute. Next I would add the coconut milk and cook over moderately high heat until the shrimp is cooked and the sauce has thickened.
  3. I would garnish both the shrimp and sweet potato fries with either fresh cilantro or basil and serve the two together as a tasty meal!

I'd make this recipe that Party posted before, subbing the shrimp for chicken. Luckily I have carrots in my cupboard already. I've been wanting to try it.

I'd make the same thing. Sweet Potato fries and coconut shrimp. Both are delicious and simple but at the same time divine tasting.

I would make a Thai curry with the shrimp, sweet potatoes, and coconut milk. I am not a fan of coconut meat, but the milk is delicious. It'd make it hot and not so thick, but really good. I might even add eggplant cause I like that too. Yum indeed. -LW

Peanut curry with oven roasted sweet potatoes and shrimp. Saute onions and garlic. Optional: leeks, peas, broccoli, etc. Add curry paste, peanut butter, coconut milk. Cook at few minutes. Add shrimp and pre-cooked sweet potatoes. Cook til shrimp done. Pour over brown rice. YUM!

maybe a curry of some sort with the coconut milk and shirmp and then roast some sweet potatoes? i dont really think that shrimp and sweet potatoes go very well together

I would make peanut coconut shrimp making the sauce out of the coconut sauce and existing peanut sauce... I'd saute some onion in some veggie oil, add some garlic, and once soft, add the coconut milk and peanut sauce combo til it simmers. I'd then add the shrimp to cook them in the sauce and finish after the shrimp is pink by adding some cilantro AND basil. With the sweet poato, I'd make sweet potato cakes.. essentially make mashed sweet potatoes using a few tablespoons of the cocnut sauce to echo the flavor.. then making patties out of the mixture. Fry til brown on both sides. Serve with the potato cake on the bottom of a plate and spoon shrimp and sauce over it. The flavors will mix and absorb and it'll be delcious.

Is this really that much of a stretch? Aren't these the ingredients for kaeng ka-ree... a Thai yellow curry?

I was thinking to make a quesdilla with the sweet potatoes and the cooked shrimp maybe add black beans. Maybe use the coconut milk in a coconut cake. Not sure that is a tough one.... Another idea is to cube and roast the sweet potatoes and sautee the shrimp and put it over greens and make a salad.

I would make Sweet Potato gnocchi, then I would saute the shrimp, use the coconut milk to make a white sauce and serve it like that.

wow that's a tough one! OK - I think the menu would be grilled shrimp with sweet potato salad, and coconut flan brulee for dessert. For the shrimp: I would simply brush them with olive oil and garlic, skewer them, and grill. I might add some chili powder or chipotle peppers (finely crushed) to the mix. ( I LOVE chipotle!) For the sweet potato salad: I would boil the sweet potatoes, cube, toss with scallions, white currants/raisins, and a vinagrette made with olive oil, S&P, lemon and orange juice, soy sauce, and a bit of garlic. and a bit of hot sauce, chili powder or cayenne for bite. Maybe throw in a few chopped peanuts if I felt like it, and serve it at room temp. I would serve the above with a nice cold beer, and perhaps some warm tortillas. For the Flan: use the can of coconut milk, add a can of condensed milk, 5 eggs, vanilla, put in tins, bake in water bath in 325 oven for 40-45 min til set but jiggly, cool, sprinkle with granulated sugar, torch to carmelize, voila. I might add some toasted coconut as garnish. To be honest, I've made flan, but never tried putting a creme brulee topping on it, but flan is easier to make than creme brulee, less steps, and the brulee is easier/less time than the carmel topping on the flan! :-D (I'm the queen of saving time in the kitchen, but making it look like you were in there all day!)
