'Wich of the Week: Avocado and Mango With Cilantro-Lime Mayonnaise

When a recipe calls for cilantro, I'm always forced to buy way more than I'll ever need, which leads me on a search for even more cilantro-centric recipes. That was the catalyst for today's 'Wich of the Week, which features an unorthodox combination of mango and avocado on healthy multigrain bread.

This vegetarian sandwich has a refreshing tropical flavor that's alternately tangy and mild. The creamy avocado balances out the zip of the lime and the sweetness of the mango. I decided to make two versions: one vegetarian and one with ham for the hardcore meat eaters. But we all agreed that the sandwich was better without the ham, since the cold cuts overpowered the more delicate fruits. I do recommend you add some clover sprouts for added texture; just steer clear of the recalled ones!

Avocado and Mango Sandwiches With Cilantro-Lime Mayonnaise

Ingredients

  1. 1/3 cup light mayonnaise
  2. 1/4 cup fresh cilantro leaves, coarsely chopped
  3. 1 tbsp. fresh lime juice
  4. coarse salt and ground pepper
  5. 8 slices multigrain bread, toasted
  6. 1 head Bibb lettuce, leaves separated
  7. 1 mango, peeled, pitted, and thinly sliced
  8. 1 Haas avocado, pitted and thinly sliced

Directions

  1. In a small bowl, combine mayonnaise, cilantro, and lime juice; season with salt and pepper.
  2. Dividing evenly, spread toasts with mayonnaise mixture. Top 4 toasts with lettuce, mango, and avocado; cover with remaining toasts.* Serve immediately.

Serves 4.

*I also added clover sprouts.

I've had this recipe bookmarked for weeks and I finally made it for lunch today and it was so tasty! I really liked the cilantro mayo - I'm not a big fan of cilantro, but this was good! I eat a lot of things with fruit thrown in (I love chicken salad with purple grapes). I will definitely be making this again!

I don't like mayo, but I'd definitely eat the rest of the sandwich with a little dijon mustard instead.

I made this last night and it was so yummy! I skipped the mayo and just mashed the cilanto into the avocado. AWESOME! Great idea!

i get flummoxed by the size of a cilantro bunch too! somehow it's always good to me in a vietnamese style sandwich, using saigon sandwich (on larkin) as a guide. mmm mmm pate.

I hate mayo, but I'd try a little of this! I love the cilantro/lime combo! I'd leave out the mango though. I don't like to mix fruit with savory foods for some reason.

I also make my own bread, and this sounds absolutely delightful! I'm a big fan of sweet/salty combos, so I'll probably try it with a slice or two of turkey, or maybe some rotisserie chicken. Yum yum!

Yummy! I'm making this for sure. I'm into making my own bread, with a bread machine to mix and knead, then I let it rise and bake in oven. As stated before my hubby is a bread boy and he'll love this.

I've made that sandwich and loved it but my only problem is that it was really slippery--it was best eaten kind of wrapped up to keep all the ingredients together.

Oh! One more thing, it's very healthy and it has omega-3. Also good for someone who's on diet.

i made this today- only i made it without the ham and sprouts and lime zest instead of lime juice- SOOOO good!! :drool: i dont even think it needs the mayo- if you have a good avocado and mango the combination of buttery and sweet are enough!!

That looks delicious, I like the idea of combining mango and avocado! My only problem is I can't really find tasty mangoes at the moment, and I'd be afraid the sandwich would be tasteless and soggy. :(

that bread sorta looks like my ezekiel sprouted sesame bread! i had a sandwich similar to this, avocado, sprouts, but i had it with morningstar tomato basil patty and fat free mozzareeella
