... I am czech and kolaches are definitely the bomb. We make them every christmas time, with tradition recipe that makes about 200! It is an all day project. Poppyseed is one filling but they are definitely not folded like that! What you are supposed to do is take the little ball of dough, and press it out so there is a thinner part in the center and then edges, like a danish sort of. Kolaches are so much better than danishes though because they have the delicious popsika (the stuff sprinkled ontop), and the yummy fillings (we usually do things like strawberry, apricot, blackberry -- whatevers available really) and the nice almost sour dough which contrasts all the sweetness wonderfully. Oh, this is making me hungry for kolaches. Sadly no time to make that delicious old recipe just yet.

I had never heard of kolaches until I moved to Texas. They are yummy little things. :) There is a place called Kolache Heaven here in town and they had ones with sausage & cheese and my favorite.....cream cheese! Mmmmmm good.

I love kolaches! They're easy to find in Texas because a lot of Czech immigrants settled here.

A lot of Cambodian immigrants in California and Texas sell kolaches i their doughnut shops..but they def. aren't the traditional kind.

Yeah, they are really good I think we should stray from the traditional and start changing up the fillings - something like mango, or blackberry or strawberry rhubarb. Thoughts?

In croatia 'kolac' (pronounced the same way- co (like in cola) - la- ch) means cake..and we make everything with poppyseeds back home!! Looks yummy!

Where I live kolaches are like little sausages wrapped in this melt in your mouth bread. And the pastry that you have in the post is called a pocket.

*gasp* How could you not have heard of a kolache? They are only the best morning pastry in the world. Though admittedly, I've never tried a traditional poppyseed one. The apricot and strawberry fillings are really yummy! I guess it helps if you live in an area where Eastern European immigrants settled.
