Lemon Frozen Fruit Bar Cocktail

Notes
- Thawed frozen raspberries will break apart easily, helping speed up the muddling process.
- For a mocktail version, skip the liqueur and replace the vodka with non-alcoholic vodka, tonic water, or more seltzer.
- Honeydew melon liqueur can be tricky to find, but a general melon-flavored liqueur works great.
- If your melon liqueur is green, note that it will darken the pink-red hue of the drink.
- Add more seltzer if the drink is too strong for your liking. Alternatively, you can use less vodka.
Ingredients
- 1 Outshine Lemon Fruit Bar
¼ cup fresh or thawed frozen raspberries
1 teaspoon sugar
1 ¼ ounces vodka
4 ounces plain seltzer
1 ounce melon liqueur
Lemon peel
Fresh mint
Directions
- Add raspberries and sugar in a chilled glass, then muddle with a muddler or the end of a wooden spoon.
- Place the Outshine Lemon Fruit Bar in the glass.
- Add vodka, seltzer, and melon liqueur to the glass, making sure to pour over the ice pop.
- Stir the drink with the fruit bar, then garnish with lemon peel and fresh mint. Let the ice pop melt slightly before drinking.
