Copycat Tinx Sakara Salad

Ingredients
- 1/2 cup kale, chopped
1/2 cup purple kale, chopped
1/4 cup purple cabbage, chopped or shredded
1 avocado
1 tablespoon sesame seeds or everything bagel seasoning
1/4 cup granny smith apples, chopped
1/4 cup canned chickpeas
1/4 cup carrots, chopped or shredded
1/4 cup watermelon radish (or any radish variety), chopped
2 tablespoons crumbled feta
2 tablespoons seed or nut mix
- For the dressing:
2 tablespoons green Tabasco
2 tablespoons olive oil
2 tablespoons dijon mustard
2 tablespoons vinegar (I used rice vinegar)
Directions
- Wash and chop the kale, cabbage, apples, carrots, and radish into even-size pieces.
- Slice the avocado, and coat with sesame seeds or everything bagel seasoning.
- Put kale in a large bowl, and top with cabbage, apples, carrots, radish, chickpeas, feta, and seed mix.
- Make the dressing by combining Tabasco with olive oil, dijon mustard, and vinegar, then drizzle over salad. Top with the avocado.
- Toss if desired, and enjoy!
