LilSugar Challenge: What's Your Go-To Dinner?

Meatloaf, again? Every mama has a dinner that she can practically make with her eyes closed. She turns to it when she's pressed for time or just isn't in the mood to think up a new meal. Whether it's breakfast for dinner or another variation of rotisserie chicken, we want to know what you cook up on a regular basis. I'll kick things off with my top three go-to dinners for the kids:

  1. Pasta and meatballs
  2. Rotisserie chicken with roasted potatoes
  3. Tilapia fingers with corn and snow peas

Yeah, spaghetti with bolognese sauce is something I make a lot when I'm not feeling creative. It's even faster than meatballs, cause there is no rolling! haha. I do make a fairly fancy sauce from scratch though, which has onions, celery, green bell pepper, carrots, olives and bay leaves in it. Another thing that is quicker is honey mustard chicken with rice and green beans. Throw honey, mustard, salt, pepper and lemon juice together, pour over chicken in a baking dish and bake that. I usually take canned green beans with that which I pan fry with some onions, bacon bits and slivered almonds. I guess I make tortillas a lot too, because since I buy the shells and the salsa at the store, I only have to brown the meat and throw some seasoning on there. In case those all sound really elaborate.. I do try to always have everything on hand, and even have chopped up onions and celery in the freezer at all times.

Go-to meals for when my nieces and nephews come over will always be sandwiches. Nothing simpler. We only do something more fancy if we have plenty of time. Otherwise, PB&Js it is!
