Peanut Butter Noodles


  1. 1 pound udon noodles or spaghetti
  2. 1 small garlic clove
  3. 1-inch piece peeled fresh ginger
  4. 1⁄2 cup smooth peanut butter
  5. 2/3 cup warm water
  6. 2 tablespoons soy sauce
  7. 1 tablespoon Asian sesame oil
  8. 1 tablespoon red wine or cider vinegar
  9. 1 teaspoon sugar
  10. 1⁄2 to 1 teaspoon red pepper flakes
  11. Any combination of the following toppings: sliced cucumbers, chopped peanuts, sugar snap peas, and shredded chicken if you need to please a meat-eater


Prepare the noodles according to package instructions. Set aside. With the motor running, drop the garlic and ginger into the bowl of a food processor and process until finely chopped. Add the peanut butter, water, soy sauce, sesame oil, vinegar, sugar, and pepper flakes and process until smooth. Toss with the noodles and add the desired toppings.
