hehe I get my 2.5 year old to practice folding a washcloth while I fold the other stuff...the bad thing is she usually ends up randomly grabbing a freshly-folded pile of clean clothes and throwing it across the room or running away with it, tossing it everywhere. I have found a method to keep her busy and save me a little work when hanging out clothes: I put the laundry basket on a crate so it will be off the ground, then ask my girl to hand me the clothes from the basket so I can hang them up. Every now and then I hold her up and let her try to pin something small onto the line.
