Let me start by saying that if you don't already have an Instant Pot, you should get one ASAP. I'll admit that since I'm a creature of habit, I tend to shy away from shiny new kitchen gadgets, but when my mom bought one for me, family mealtime at my house changed drastically. And by changed, I mean was made a hell of a lot easier.

I have three kids — one is super picky, one is mildly picky, and one will eat just about anything. It is always a bit of a struggle to make dinners that everyone will enjoy, but the first thing my mom showed me how to make in the Instant Pot satisfied everyone (including my husband and me): a pull-apart chicken bar.

This simple recipe, which requires no extra trip to the grocery store, is completely customizable, which is perfect for different tastes. My kids also love to help make this since they can shred and mix the chicken. You likely already have them in your kitchen. I use three chicken breasts (a little goes a long way), but you can use as many as you need. You also need about a cup of chicken broth and some salt and pepper, and you're good to go.

Just season the chicken with salt and pepper and put it into your Instant Pot along with the chicken broth.

Close the lid, make sure it's sealed, hit "Pressure Cook," and set the timer for 13 minutes. You can increase or decrease the time depending on how much chicken you're making.

You can shred your chicken any way you like. I prefer to use my Kitchen Aid because it requires the least amount of effort. Put the chicken into the mixing bowl, turn it on to the lowest setting, and let the mixer work its magic.

The sky is the limit here. I use this for chicken salad, chicken soup, and chicken pot pie, or I mix it with some sauce and call it a day while my picky eaters just eat it plain or with their favorite sauce. I'm a big fan of the Tikka Masala simmer sauce and garlic naan from Trader Joe's. I also like to mix it with TJ's Soyaki sauce and serve it over rice with some veggies on the side. Barbecue sauce works great, or, if you like some heat, add a little buffalo sauce and serve it in celery boats.
