Easy Peasy Fairy Cakes.

Ingredients

  1. 125g unsalted butter, softened
    125g caster sugar
    2 large eggs
    125g self-raising flour
    half teaspoon vanilla extract
    2-3 tablespoons milk
    12-bun muffin tin lined with 12 muffin papers

  1. half cup unsalted butter, softened
    half cup superfine sugar
    2 large eggs
    three-quarters cup self-rising cake flour
    half teaspoon vanilla extract
    2-3 tablespoons milk
    12-cup muffin pan lined with 12 paper baking cups
  1. Buttercream Icing (not Nigella, but from the back of the icing sugar box)
  1. 75g (3oz) Butter
    17g (6oz) Icing sugar
    a few drops of milk, warm water and/or vanilla extract

Directions

Preheat Oven to 200 C/400 F/Gas Mark 6

Basically put everything but the milk in your food processor and mix until completely smooth. You can do this by hand, which we did because we are poor students, and it still comes out fine, plus you get extra exercise. When all the other stuff is mixed add the milk whilst still stirring to make it a soft dropping consistency.

When making it doesn't look like it will be enough, but it really is. Spoon into cake cases and bake in the oven for 15-20 minutes or until they look done, or until you get really impatient and take them out anyway (guilty :oops:).

Whilst the cakes are cooling you can make the icing. To make the icing just put all the ingredients in a bowl and mix. Um yeah, not very technical, but it worked. This was enough to cover all our first batch and a few more of our second. Leave to set and then eat!

We decorated ours with jelly sweets and writing icing.
We also chopped up marshmallows in the middle of some before we put them in the oven, to make them all gooey.
The second batch we made chocolatey by adding the same amount of cocoa powder as the flour.
I also used Soya milk, and skipped the vanilla (we don't have any) and it turned out fine. So I'm guessing this recipe is good for adjusting however you want. Next time, we going to try them out with lemon or honey.
