Brazilian Corn Cake (Bolo Pamonha)

Ingredients
- 1 can condensed milk
3 eggs
3/4 cup coconut milk
1 cup yellow corn flour
1/2 cup oil
1 drained can corn
1 heaped tsp baking powder
Directions
Preheat oven to 375ºF/190ºC
Beat everything together in a food processor (adding the baking powder last)
If made in a bundt cake pan like I did it takes about 45 minutes to bake and using a round or squared cake pan takes about 35 minutes.
I love eating this cake right out of the oven, when it's got the humid doughy texture from the heat, just like a Pamonha!

Pamonha is a traditional Brazilian food. It's a paste made from corn and milk, boiled wrapped in a corn husk. Some people like to use coconut milk (like me, I make mine sweet with a couple strings of cheese mixed inside). They can be salty or sweet, most states in northeastern Brazil serve it as a sweet dessert, though.
