Beginner Linguine With Clams

Ingredients

  1. 4 ounces uncooked linguine
    3/4 chopped green pepper
    1 small onion, chopped
    2 garlic cloves, minced
    1 tablespoon olive or vegetable oil
    1 tablespoon butter
    1/4 to 1/3 cup clam juice
    1/4 to 1/2 teaspoon dried basil
    1/4 teaspoon salt
    Pepper
    Crushed red pepper flakes
    1 can or 6-1/2 ounces minced clams, drained

Directions

  1. Cook pasta according to package directions.
  2. In a small skillet, sauté the green pepper, onion and garlic in oil and butter until almost tender.
  3. Stir in the clam juice, basil, salt, pepper, and red pepper flakes. Bring to a boil. Reduce heat. Simmer, uncovered, for 5 to 7 minutes.
  4. Stir in clams, and heat through.
  5. Drain pasta and transfer to a bowl. Pour sauce over pasta, tossing to coat.

Serves 2.
