Cucumber Gimlet Shots

Notes
Other gins can be used, but Hendrick's Gin is ideal for these shots, as it's infused with cucumber.

Ingredients
- 1 cucumber
1 ounce Hendrick's Gin
1/4 ounce freshly squeezed lime juice
1/4 ounce simple syrup
Directions
- Peel a cucumber, and cut 2 2-1/2-inch pieces from each end, reserving the center length of cucumber for another use. Trim the rounded end of the cucumber pieces so that they are flat on the bottom, taking care not to cut into the seeded part, as it will not be watertight.
- Using a melon baller, carefully hollow out the cucumber shot glasses, making sure to not cut through the cucumber walls or bottom. Reserve the cucumber seeds and flesh in a bowl.
- Combine the gin, lime juice, simple syrup, and a heaping teaspoon of the cucumber flesh in a cocktail shaker. Top with ice, and shake until chilled. Strain into the cucumber shot glasses.
