Barbecue Sweet Potato Burgers

Ingredients
- 1 sweet potato, peeled and sliced
1 (15.5-ounce) can white beans, drained and rinsed
1 tablespoon barbecue sauce
1 clove garlic, chopped
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup flour
1/4 cup breadcrumbs
1 tablespoon vegetable oil
4 whole-wheat buns
4 slices cheddar cheese
1 avocado, sliced
1/4 red onion, finely sliced
4 leaves romaine lettuce
Additional barbecue sauce
Directions
- Peel and slice the sweet potato and place in a small saucepan. Fill with water and simmer until fork tender.
- Drain the sweet potatoes and add to a mixing bowl. Add the white beans, garlic, barbecue sauce, salt, pepper, and flour. Stir to incorporate, then use a potato masher to create a smooth texture.
- Cover a plate with the breadcrumbs, then form four patties from the mixture. Place on the plate, coating both sides with the breadcrumbs.
- Heat a large sauté pan over medium heat, then add the oil, swirling the pan to coat. Gently place the sweet potato patties on the pan and let cook 3 to 5 minutes per side, or until the outside is nice and toasted. Flip and continue cooking.
- To assemble, place a slice of cheese over each patty and let melt. Place on the bun base, then top with 1/4 of the sliced avocado. Add the lettuce and red onion to the other side of the bun and additional barbecue sauce. Assemble the rest of the burgers and serve.
