Slow-Cooker Bolognese Sauce

Adapted from Essentials of Classic Italian Cooking [1] by Marcella Hazan

Easy Slow-Cooker Bolognese

Ingredients

  1. 1 (28-ounce) can whole peeled tomatoes
    1 stick salted butter
    1 medium yellow onion, peeled and halved
    1/2 pound ground beef (I used 85% lean, 15% fat)
    2 sweet Italian pork sausage links, casings removed
    Salt, to taste

Directions

  1. Place all ingredients in a slow cooker. Cook on high for 4-5 hours or on low for 6 hours.
  2. Give the sauce a stir, then use an immersion blender and pulse a few times to break up the onions and large chunks of tomatoes. Alternatively, remove the onions and reserve for another use, or gently mash them using the back of a spoon.
  3. Serve over pasta, and store any leftovers in an airtight container in the refrigerator for up to a week.
