Lactation Cookies

  1. 1 1/2 cups banana, well-mashed (3 large ripe bananas)
    1 teaspoon vanilla extract
    1/4 cup coconut oil, melted
    1/4 cup honey
    1/4 cup peanut butter
    3 cups rolled oats
    2/3 cup almond flour
    1/4 cup mild brewer’s yeast
    1/2 teaspoon kosher salt
    1 teaspoon cinnamon
    1 teaspoon baking powder
1 cup roughly chopped chocolate or large chocolate chips
    1/2 cup dried sour cherries
    1/2 cup walnuts, chopped

  1. Preheat oven to 350°F.
  2. In a large bowl, combine the mashed bananas, vanilla extract, melted coconut oil, peanut butter, and honey, then set aside.
  3. In another bowl, mix together the oats, almond flour, brewer's yeast, salt, cinnamon, and baking powder.
  4. Add the dry ingredients to the wet ingredients and stir until combined. The dough should be thick and sticky at this point. Next, fold in the chocolate chips/chunks, dried sour cherries, and walnuts.
  5. Using a spoon, scoop dollops of the dough, each about 2 tablespoons in size, an inch apart onto a parchment-lined baking sheet.
  6. Bake for 15 to 20 minutes until the cookies are browned and the oats are toasty.
  7. Allow to cool and enjoy.
