Corn, Avocado, and Edamame Salad

Ingredients

  1. 1/2 cup corn kernels, cooked from fresh or frozen and thawed
    1/2 cup cooked out-of-the-shell edamame
    1 tablespoon chopped red onion
    1/2 cup chopped tomato
    1/2 avocado, cut into cubes
    2 teaspoons olive oil
    2 teaspoons red wine vinegar
    1/8 teaspoon salt
    1/8 teaspoon garlic powder
    Black pepper to taste

Directions

  1. Combine all ingredients in a bowl and toss to coat.
