Easy Potato Wedges

Ingredients
- 6-8 yellow potatoes
3-4 tablespoons avocado oil
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon dried red pepper flakes
1/2 teaspoon dried parsley
Salt and pepper to taste
- Dipping Sauce:
1/3 cup mayonnaise
1 tablespoon yellow mustard
1 tablespoon honey
1 tablespoon lemon juice
1 teaspoon dried parsley
Salt and pepper to taste
Directions
- Clean potatoes and cut lengthwise into quarters, then cut the quarters in half.
- Bring a medium pot of water to boil, then add the raw potato wedges.
- Parboil the potato wedges for 8-10 minutes, then drain.
- While the potatoes are boiling, combine oil and seasonings in a small bowl and set them aside.
- Heat the oven to 425°F.
- Coat the partially boiled potato wedges with the seasoned oil, then place on a baking sheet or air-fryer tray, skin side down.
- Place the tray in the oven for 45-55 minutes, or until the potato wedges are crispy and golden brown.
- While the potatoes are baking, combine the ingredients for the dipping sauce in a small ramekin.
- When the potatoes are done, remove them from the heat and serve immediately alongside the dipping sauce.
