Gingerbread Chia Pudding

Notes

If you find the consistency of your chia pudding is off, adjust the amount of milk you are using in the recipe.

Ingredients

  1. Pudding:
    1/4 cup chia seeds
    3/4 cup unsweetened soy milk (or any milk you prefer)
    1 tablespoon maple syrup
    1/4 teaspoon ground ginger
    1/4 teaspoon cinnamon
    Dash of ground clove
    Sprinkle of sea salt
  1. Toppings:
    1 tablespoon raisins
    1 tablespoon chopped pecans (or other nut)

Directions

  1. Add all the ingredients for the pudding (save the toppings) to a mason jar and stir to combine.
  2. Refrigerate at least six hours or overnight. Try to give the mixture an additional stir while it's setting.
  3. Add toppings and enjoy!
