Plum Loco Refrigerator Jam

Original Recipe

Plum Loco Refrigerator Jam

Ingredients

  1. Basic Sweet
  1. 4 lbs of Italian prune plums, washed, pitted and rough chopped
    2 cups of sugar
    The zest and juice of 1 lemon
    2 teaspoons grated nutmeg [or to taste]
    1/2 Tablespoon salt [or to taste]
  1. Variations
  1. 1-2 habanero peppers, finely chopped for spicy variety
    1 additional lb. of plums for chunky style
  1. Equipment:
  1. Kitchen scale
    Cutting board
    Pairing knife
    Grater
    Slotted spatula [or slotted spoon] for skimming
    Wooden spoon for stirring
    Measuring spoons
    Measuring cup
    Lemon zester
    Plastic gloves for chopping habaneros
    6 quart stainless steel stock pot

Directions

Add all ingredients for “Basic Sweet” recipe to a 6 quart stock pot and place over medium-high heat, stirring continuously until sugar is melted and plums begin to exude juice.

Bring mixture to a boil and reduce heat to medium, stirring frequently to avoid scorching.

Skim foam as it occurs.

Reduce the heat, as needed, to maintain a simmer, stirring more frequently as the jam reduces in quantity to about half.

Continue to cook to desired consistency.

Remove from heat and allow to cool before spooning into jars.

Top filled jars with paper toweling and allow to cool completely before adding lid.

Variations

Spicy-Sweet
Add chopped habanero peppers when volume is reduced to about half. Continue to simmer gently for 10 minutes, stirring constantly after peppers are added.

Chunky Chutney Style
Add additional pound of pitted and chopped plums once the desired consistency has been reached. Continue cooking until newly added fruit is soft but still intact.

Sweeter Varieties
More sugar, salt or nutmeg may be added, to taste, during the last 10 minutes of cooking.
