Plum Loco Refrigerator Jam
This is the easiest refrigerator jam that I've ever made. It's not too sweet - not too tart and you can create so many variations of it in the blink of an eye.
The basic recipe will yield approximately 48 oz. of jam. It can be kept under refrigeration or canned using traditional methods.
Prep time 15-20 minutes
Cooking time: 1.50 - 2 hours
Recipe is easy to halve or double.
Kid-friendly with adult supervision.

Measuring spoons
Measuring cup
Lemon zester
Plastic gloves for chopping habaneros

Directions
Add all ingredients for “Basic Sweet” recipe to a 6 quart stock pot and place over medium-high heat, stirring continuously until sugar is melted and plums begin to exude juice.
Bring mixture to a boil and reduce heat to medium, stirring frequently to avoid scorching.
Skim foam as it occurs.
Reduce the heat, as needed, to maintain a simmer, stirring more frequently as the jam reduces in quantity to about half.
Continue to cook to desired consistency.
Remove from heat and allow to cool before spooning into jars.
Top filled jars with paper toweling and allow to cool completely before adding lid.

Spicy-Sweet
Add chopped habanero peppers when volume is reduced to about half. Continue to simmer gently for 10 minutes, stirring constantly after peppers are added.Chunky Chutney Style
Add additional pound of pitted and chopped plums once the desired consistency has been reached. Continue cooking until newly added fruit is soft but still intact.Sweeter Varieties
More sugar, salt or nutmeg may be added, to taste, during the last 10 minutes of cooking.
