To make the peach puree, skin and pit one peach and cut into sections. Place in a food processor or blender and pulse until smooth. Place in a small, spouted container on the bar cart.
Assemble the drink by adding the peach puree to a Champagne flute then top with the crème de cassis.
Angle the glass and add the Champagne. Top with a strawberry.
