Tigernut Coconut Bread

Ingredients
- 2 cups almond flour
1 cup TigerNut flour
1/4 cup unsweetened shredded coconut
3 tablespoons baking powder
2 tablespoons ground flax seeds
1 teaspoon cinnamon
1 teaspoon sea salt
2 very ripe bananas
1/3 cup maple syrup
3 tablespoons melted coconut oil
1 teaspoon vanilla extract
2 tablespoons unsweetened shredded coconut
Directions
- Preheat oven to 350°F, and line a loaf pan with parchment paper so that about 2 inches of the paper hang over the sides.
- In a large bowl, sift together almond flour, TigerNut flour, 1/4 cup shredded coconut, baking powder, flax seeds, cinnamon, and sea salt.
- In a medium bowl, mash together the bananas maple syrup,coconut oil, and vanilla extract, until smooth.
- Add the wet ingredients to the dry and mix until well combined.
- Pour the batter into the loaf pan. Sprinkle with the remaining shredded coconut.
- Bake for 50 minutes or until a toothpick comes out clean. Enjoy!
