Alton Brown [3] knows the science of a tasty burger [4], and he shared it with his fans live on Facebook [5]. It turns out, it's not in the seasonings, even pepper! He explained:

"When it comes to grilling burgers, I am a purist. I do not like to add a lot of flavors. What I like to do is buy really good meat. I would suggest you go and have meat actually ground. I go with half sirloin, half chuck. A lot of stores will actually include filet mignon trimmings in their hamburger meat. But if you get really good meat, you shouldn't have to do a lot to it. Salt and pepper is just about it, and to be honest, the pepper is kind of optional."
