Coconut Mango Rice Pudding

Ingredients
- 1 cup canned coconut milk
1 tablespoon honey
1 cup cooked brown rice
1 mango
Cinnamon, to taste
Directions
- Add the coconut milk to a small pot and simmer over medium-low heat. Stir in honey until nicely combined. Add rice and continue stirring. Let the mixture simmer for about 5-10 minutes, or until it becomes noticeably thicker.
- Transfer to a bowl. Serve with fresh mango slices, and sprinkle with cinnamon.
