Mini Taco Cups

Ingredients
- 4 to 5 8-inch tortillas
1 15-ounce can refried beans
1/2 cup shredded cheddar cheese
Black olives (optional)
Salsa (optional)
Directions
- Preheat your oven to 375ºF.
- Use a drinking glass to cut 12 rounds out of the tortillas and place into a lightly greased muffin tin. Press the rounds slightly so they sink into the muffin tin.
- Top the tortillas with refried beans and cheese along with any other toppings your child loves, like chopped green pepper, olives, salsa, shredded chicken, or cooked ground beef.
- Place in the oven and bake for 12-15 minutes or until the tops are bubbling and the edges of the tortillas have just started to brown.
- Cool before serving.
