Slow-Cooker Sweet Potato Chili

Ingredients
- For the chili:
2 sweet potatoes, peeled and chopped
1/2 onion, diced
2 cloves garlic, diced
1 (28-ounce) can crushed tomatoes
1 (15.25-ounce) can white beans, drained and rinsed
1 (15.25-ounce) can kidney beans, drained and rinsed
1 (15.25-ounce) can black beans, drained and rinsed
1 red pepper, chopped
1 yellow pepper, chopped
1 (1.25-ounce) packet chili mix
2 cups vegetable stock
- For the toppings:
Sour cream
Crumbled tortilla chips
Lime slices
Shredded cheddar cheese
Avocado, chopped
Directions
- Add all ingredients to your slow cooker and set to high. Cook for 6 to 8 hours, or until the sweet potato is fork tender.
- Top with your favorite toppings, such as sour cream, shredded cheese, fresh lime, and avocado.
