Green Apple Salad With Green Tea Dressing

Ingredients
- For the Salad:
2 cups baby kale
2 cups green pea shoots
1 green apple, thinly sliced
1/4 cup slivered almonds
1 green onion, thinly sliced
1/4 cup feta cheese
- For the Dressing:
1/4 cup green tea
1 tablespoon olive oil
1/2 teaspoon Italian seasoning
1/2 teaspoon fresh lemon juice
Salt
Pepper
Directions
- Place the baby kale and green pea shoots in a mixing bowl.
- Add the green tea, olive oil, Italian seasoning, and lemon juice to a small dish, and whisk together until emulsified.
- Lightly toss the greens with the dressing.
- Divide the greens between four plates then distribute the green apple slices on plates.
- Sprinkle with the slivered almonds, green onion, and feta cheese.
- Finish with salt and pepper to taste.
