Ingredients
- 1 cup frozen cooked edamame, thawed
1/2 cup cooked quinoa
1 cup chopped tomato
1/2 cup chopped cucumber
1 tablespoon lemon juice
1/2 teaspoon lemon zest
1 tablespoon olive oil
1/4 teaspoon ground cumin
1/8 teaspoon salt
Directions
- Toss together edamame, quinoa, tomato, and cucumber.
- Whisk together lemon juice, zest, olive oil, cumin, and salt and drizzle over the edamame mixture, tossing to coat.
