Peaches-and-Cream Overnight Oats


  1. 2 cups uncooked old-fashioned rolled oats
    2 cups plain Greek yogurt
    1 cup canned coconut milk (I used full fat, but you can use low fat as well)
    1 cup almond or cashew milk
    2 teaspoons cinnamon
    2 tablespoons pure maple syrup
    1 teaspoon pure vanilla
    2 large peaches, pitted and diced


  1. Mix all ingredients together in a large bowl.
  2. Divide into four airtight containers or mason jars and place in the fridge overnight.
  3. Enjoy cold or warmed and top with more peaches and/or nuts.
