Peaches-and-Cream Overnight Oats Is the Perfect Summer Breakfast

Summer is peach season which means they are totally ripe, delicious and affordable this time of year! Yay! These Peaches & Cream Overnight Oats are perfect for a summer breakfast because you can have them cold or hot and they're ready to grab and go!

I actually used to hate peaches. Growing up we mostly ate nectarines and the fuzzy outside of the peach threw me off majorly. Now I actually really love them, but they have to be just right! Not too ripe that they are gooshy, but not too unripe that they are sour. Luckily peaches in summer are usually pretty perfect.

This recipe takes about 5 minutes to make and you can prep several jars for the week so you don't have to think twice about having a healthy breakfast as you run out the door!

Peaches & Cream Overnight Oats

INGREDIENTS

    2 cups uncooked old-fashioned rolled oats 2 cups plain Greek yogurt 1 cup canned coconut milk (I used full fat, but you can use low fat as well) 1 cup almond or cashew milk 2 teaspoons cinnamon 2 tablespoons pure maple syrup 1 teaspoon pure vanilla 2 large peaches, pitted and diced

    INSTRUCTIONS

    1. Mix all ingredients together in a large bowl.

    2. Divide into four airtight containers or mason jars and place in the fridge overnight.

    3. Enjoy cold or warmed and top with more peaches and/or nuts.
