Gluten-Free, Dairy-Free Chocolate Chip Cookies

Gluten-Free Chocolate Chip Cookie Recipe

Ingredients

  1. 3 cups almond flour
    1/4 cup coconut flour
    1 tsp. baking soda
    1 tsp. salt
    2 eggs, room temperature
    1/2 cup coconut oil, softened
    1/2 cup honey
    1 tsp. vanilla
    1 1/2 cups gluten-free, dairy-free chocolate chips (I use Enjoy Life)

Directions

  1. Preheat oven to 375ºF.
  2. Combine dry ingredients, minus chocolate chips, in one bowl, and combine wet ingredients in a separate bowl.
  3. Pour the wet ingredients into the dry and stir together with a wooden spoon.
  4. Fold in the chocolate chips.
  5. Drop by rounded spoonfuls onto nongreased baking sheet. The cookies won't spread while baking, so I like to press them down a little so they're more of a disc shape rather than a ball.
  6. Bake for about 6 minutes or until tops are golden.
  7. Store in airtight container for up to a week.
