Curried Egg Salad Sandwiches

Ingredients

  1. 2 large eggs, hard-boiled, chopped
    2 large egg whites, hard-boiled, chopped
    2 1/2 tablespoons reduced-calorie mayonnaise
    1 tablespoons raisins, chopped
    1 tablespoon red onion, finely chopped
    3/4 teaspoon curry powder
    1/4 teaspoon table salt, or to taste
    2 leaves boston lettuce
    4 slices reduced-calorie bread, toasted

Directions

  1. In a bowl, combine eggs, mayonnaise, raisins, onion, curry powder, and salt.
  2. Place 1/2 cup egg salad on each of two slices of toast; top each with a lettuce leaf, torn or folded to fit bread. Top each sandwich with a second slice of toast.

Serving size: Yields 1 sandwich per serving.
