Curried Egg Salad Sandwiches

Forget sad deli salads; curry spice-flavored eggs — now zero Points® — plus raisins put this classic sandwich over the top. The spice level is easily customizable, and if you aren't a fan of raw red onion, simply go with sliced scallions or snipped chives instead.

INGREDIENTS

    • 2 large eggs, hard-boiled, chopped
    • 2 large egg whites, hard-boiled, chopped
    • 2 1/2 tablespoons reduced-calorie mayonnaise
    • 1 tablespoons raisins, chopped
    • 1 tablespoon red onion, finely chopped
    • 3/4 teaspoon curry powder
    • 1/4 teaspoon table salt, or to taste
    • 2 leaves boston lettuce
    • 4 slices reduced-calorie bread, toasted

    INSTRUCTIONS

    1. In a bowl, combine eggs, mayonnaise, raisins, onion, curry powder, and salt.

    2. Place 1/2 cup egg salad on each of two slices of toast; top each with a lettuce leaf, torn or folded to fit bread. Top each sandwich with a second slice of toast.
