Healthy Salted Caramel Blondies

Because the almond butter made the mixture thick, I chose to use a beater to stir. I made two batches, one pan with parchment paper and one greased pan, and both worked well.

Ingredients
- 1 cup of unsalted creamy almond butter
1/2 cup of maple syrup
2 eggs
1 tablespoon of vanilla extract
2 cups of almond flour
1/2 teaspoon of fine grain sea salt
1 teaspoon of ground cinnamon
1 teaspoon of baking soda
1 apple of choice, cubed
Caramel sauce
Flaky sea salt
Directions
For the Blondies
- Preheat the oven to 325°F.
- Stir together the almond butter, maple syrup, eggs, vanilla, almond flour, salt, cinnamon, and baking soda until smooth.
- Pour mixture into a parchment-lined 9" x 9" pan, and spread.
- Top evenly with apple cubes.
- Bake for 40-45 minutes, until the top is brown.
- Drizzle with caramel sauce and top with flaky sea salt. Enjoy!
For the Caramel Sauce
- For caramel sauce, mix together 2 tablespoons of almond butter (can substitute for other nut butter if you prefer) and 2 tablespoons of maple syrup, until the consistency is prime for drizzling.
- You can also put 13.5 ounces of full fat coconut milk, 1/2 cup of coconut sugar and some salt in a pot and cook over medium heat and stir until the mixture thickens and looks like caramel sauce. Add in 1 teaspoon of vanilla extract and 1 teaspoon of coconut oil.
